Literally translated ‘Butterfly Farm’, Marisposas is being used to develop and produce new exotic & experimental process coffees out of Huila, Colombia.
Ran by Jairo Rodriguez along with his wife and three grown children - they control the entire process from picking through fermentation and drying as a family. This coffee undergoes a 48hr Aerobic Fermentation, followed by a 72hr Anaerobic fermentation, then sun dried to culminate in a big, bold full bodied shiraz-like coffee.
